SUMMER ON A STICK

These gin and lime icy poles are a refreshing twist on our favourite aromatic summer drink...try to stop at one!


INGREDIENTS (Makes 12)
6 oz. gin
1/2 cup fresh lime juice
1 fresh red chilli (optional)
3 cups of tonic water
icy pole mould
icy pole sticks


METHOD
1. Juice your limes and add to a large bowl with the gin and tonic water.
Pick a good gin, like a modern spicy Australian gin from Four Pillars and a clean, fresh and aromatic tonic water.

2. Give your ingredients a good stir...pour them into the icy pole mould.

3. Leave enough room at the top to add some finely sliced red chilli and lime, then cover and insert the icy pole sticks.

4. Freeze overnight, ready to enjoy the next day.
